Like for example Seo Eun-Young. I know Seo is the last name but
is Eun the middle name and Young is the first name
or back wards. Or is Eun-Young the name.

Nope. They are two part first names. =)
Example:
Yoo Bin Kim
Yoo Bin is the first name.
Kim is the last name.
Sometimes the name could just be Yoo Kim.
Also, Korean's put their last names first! So properly, it would be written: Kim Yoo Bin

No. And Yoo Bin Kim has Yoo Bin as it's first name.
I'm South Korean and I live in South Korea every year.
And Eun-Young is the first name. No middle name included.
In English it just looks like you have a middle name but in reality you don't.

Kayleigh Mi-Cha and Kayleigh Sun-Hi are very melodious, and are pleasant to say...but Kayleigh Mi-Cha even moreso, probably because all the vowels are similar and it's easier for the lips to make the "m" sound after "leigh" than the "s" sound.

EXAMPLE:
Lee Hyuk-jae
Hyuk can be the middle name but you see that - ?
That connects the Hyuk and jae so it is not a middle name.
If you see something like:
Lee Hyuk Jae
Then if someone typed it without - , it looks like Hyuk is the middle name. But actually they didnt want to add - or forgot.
