If you are a native of any of those countries, then you can live on your own once you reach the age where you would be considered an adult, which in Korea would be 19. In Japan and China it would be 18. But if you are not a native of the country and you do not hold citizenship or a long-term residency visa, then your age won't matter. You will not be permitted to live there for any extended period of time no matter how old you are. The three are some of the most difficult countries to attempt to emigrate or relocate to. If you have a Western passport and you don't qualify for a work or study visa, then you would most likely not be permitted to remain for any longer than 3 months. Without a valid visa you would not be able to rent an apartment, open a bank account, or even register a mobile phone.

Keep in mind that even those who hold a work or study visa have serious restrictions on what they can do and of course it goes without saying that there is a time limit on each visa. You must renew it once a year. To qualify for a student visa you would need to submit transcripts, pass a medical examination, and provide documentation showing that are you are capable of supporting yourself financially as it illegal to work on a student visa. You must also be accepted by a school willing to sponsor your visa.

Minors are not accepted unless their parent or guardian resides in Korea as well so International Schools are out except under very specific circumstances which I can assure you that you don't meet.

I don't think anyone lives alone in China or Japan. In Japan, housing is hugely expensive- no one can afford to live alone. In China, most people live with the whole family in two rooms.
